When the heat of Summer sets in, there’s no better breakfast than a fresh smoothie. With so many possible variations, you could drink a smoothie daily and never repeat the same one. However, this is one smoothie you’ll want to repeat often, especially if you’re a peanut butter fan. Loaded with potassium from the bananas and protein from the peanut butter, it makes a great start to the day. And did I mention that it tastes awesome? Yes, this is one of those treats that tastes like junk food, but packs a load of nourishment with every delicious sip.

Although measurements are provided below, one of the advantages of making smoothies is that you can eyeball the quantities instead of using exact measurements. The only advance work you need to do for these is throw some cut up, peeled ripe bananas into the freezer the day before. And let those bananas get plenty ripe: Black and yellow skin good, green skin bad. The recipe is for one 12-16 ounce smoothie, so multiply it by the number of people you’re serving.

Peanut Butter Banana Smoothie

2 Large Medjool dates, pitted
1&½ large or 2 small bananas, peeled and frozen
1&½ – 2 Tablespoons creamy peanut butter
½ - ¾ cup plain or vanilla non-dairy milk

Combine dates, bananas, peanut butter and ½ cup non-dairy milk in blender until smooth. If consistency is too thick, add more milk until desired consistency is achieved.
